These decadent skillet cookies cleverly combine the flavor of oatmeal cookies with the texture of cake in a deliciously miniature dessert. The cookies are made from a much thicker batter and portion sized allowing the cookies to have more of a gooey and light texture reminiscent of cake.

Unlike a traditional oatmeal cookie, these biscuits by Love and Olive Oil feature a dough infused with salt, cinnamon and espresso for added flavor. The cookies are then rolled into large sized balls that are placed inside a series of mini skillets for baking. The cookies get a golden brown crust on the top but retain a soft and gooey centre.
